1 Pot Butternut Squash Mac & Cheese Recipe
- Stage: Toddler 12+ months
Ingredients
- 1 8oz box whole wheat pasta
- 3 cups milk of choice
- 1 tbsp butter
- ½ tsp garlic powder
- ½ tsp dried thyme, plus more for topping
- ½ tsp smoked paprika
- ⅛ tsp salt
- 2 2oz packs Gerber Butternut Squash Puree
- 1 tbsp cream cheese
- ½ cup shredded cheddar cheese
- ½ cup shredded parmesan cheese
- Pepper, to taste
Steps
- In a saucepan, add the pasta, milk, butter, and spices. Bring to a boil, then cover and reduce heat to low. Cook on low for 20 minutes, stirring regularly. If at any point the noodles look dry, add another splash of milk or water.
- After 20 minutes, add the cream cheese and butternut squash puree and gently mix. Remove from heat, and add the cheddar and parmesan cheeses. Let sit for a few minutes before serving. Top with dried thyme and pepper and serve.
