Autumn Soup Recipe
- Makes: Approximately 3 cups
- Serving size: ¼ cup
- Stage: Toddler 12+ months
Ingredients
- 1 tbsp olive oil
- ½ yellow onion, diced
- 2 cloves garlic, minced
- ½ tsp salt
- 1 can white beans, rinsed and drained
- 1 cup reduced sodium vegetable broth
- 6 4oz tubs of Gerber® 2nd Foods® Veggie Power Sweet Potato Apple Pumpkin Puree
Steps
- Preheat a saucepan over medium heat and add the olive oil. Sauté the ½ yellow onion until soft and translucent, about 3-5 minutes.
- Add all remaining ingredients to the pan, stirring regularly, until evenly heated. If using an immersion blender, blend until smooth. If using a food processor or blender, transport all soup ingredients and blend until smooth.
- Make sure soup is cooled to a safe temperature and serve.
